Each muffin is 2 ounces (a nice serving size) with 120 calories and 5 grams of fiber. The muffins are certified gluten-free and kosher certified (Star K). They are sold frozen, 4 to a package. Though the muffins can be eaten at room temperature, the texture is a little gummy. Heating them for 10 seconds in the microwave does improve both flavor and texture. Our 3-year old taster loved the Zucchini Chocolate flavor. Our adult tasters choose Carrot Berry and Golden Corn as their favorites.
We also previously highlighted Food For Life flourless Ezekiel 4:9 Flax Sprouted Grain Bread . The company has extended its product line with gluten-free BlackRice Tortillas. The dark purple color of the tortillas is due to their anthocyanin pigment which is the same antioxidant-rich compound found in blueberries, blackberries, dark cherries and acai.
Each tortilla is 2 ounces, 170 calories, 4 grams of fat (0.5 grams are saturated), 30 grams of carb (1 gram of which is sugar and 2 grams of fiber), 105 milligrams of potassium and 170 milligrams of sodium. Black Rice Tortillas are found in the refrigerator section of the supermarket and should be kept refrigerated or frozen for extended storage. Because the tortillas are gluten-free they are likely to tear. Warming them increases pliability. Black Rice Tortillas are kosher certified (KOF-K).
