Fast Food Fact: Canned Corn Beats Fresh

Fresh isn’t always best—at least when it comes to corn. A Cornell University study found that canned corn had 500 times the antioxidants (disease protecting substances) than fresh corn. The heating process during canning released the beneficial antioxidants.
